Best Banana Nut Loaf Recipe
Scrumptious banana bread is January’s answer to comfort food that is good for your eyes! Donna Height has shared her cherished family recipe with us to warm up on a cold winter’s day.
Donna submitted this healthy recipe for its eggs, milk, nuts, and fruit – ingredients that contribute to healthy vision. Egg yolks are a rich source of lutein and zeaxanthin, which have antioxidant properties that improve pigment density in the macula. This pigment protects the cells in the macular area by absorbing excess blue and ultraviolet light and neutralizing free radicals.
Milk is a good source of riboflavin and can help to reduce your risk of cataracts. As well, eating a healthy balanced diet rich in fruit and vegetables may help to keep your eyes healthy and prevent the development of some eye conditions. And nuts give you a good helping of antioxidants, including vitamin C, vitamin E, beta-carotene, and zinc.
2 cups flour
1 cup white sugar
1/2 cup milk
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
3 ripe bananas, mashed
1/2 cup oil
1/2 cup chopped walnuts
1/2 tsp nutmeg
1 tsp cinnamon
Mix all dry ingredients first, then add wet ingredients to the bowl. Stir. If batter is not thick enough, slowly add more milk.
Spray loaf pans before flouring them. Pour in your batter.
Bake at 350°F until cooked, usually 40 minutes (or until you can put a butter knife through the middle to the bottom and it comes out clear). Enjoy with butter and a glass of milk.
