Coconut Curry Soup Recipe

It’s that time of year when the days are getting shorter and colder and most of us are craving some comfort food. Look no further, Donna Greuel submitted this tasty recipe for Coconut Curry Soup in the Eats for Your Eyes Contest. This recipe is packed with nutrients, making it an excellent meal to help maintain your eye health. Carrots have beta carotene giving the vegetable it’s orange hue but also Vitamin A, important for healthy vision. The chicken in this recipe is also rich in Vitamins B6 and B12 which can lower the chances of macular degeneration (AMD). The coconut of course is a source of Omega-3 fatty acids that lubricates the eye and also reduces the risk of AMD. Try this Coconut Curry Soup for the perfect blend of heat and flavour to give you a much-needed boost of nutrients this Autumn. Since it’s only a one-pot recipe it’s easy to make and ideal for a quick weeknight treat!

Ingredients

1 tablespoon butter

1 cup chopped onion, celery and carrots combined

4 cloves garlic chopped

Chicken breast cooked and cubed

1 teaspoon grated ginger

1 teaspoon curry

1 teaspoon chili

1 teaspoon cumin

4 cups chicken broth

1 can diced tomatoes

1 cup cooked basmati rice

1 can coconut milk

Salt and pepper to taste

Optional chopped cilantro

Directions

  1. Sauté celery, onion, carrots and garlic in butter until tender.
  2. Add the chicken, spices, broth and tomatoes and let simmer for 20 minutes.
  3. Add the basmati, coconut milk, salt and pepper and cilantro.
  4. Serve and enjoy!
