Blueberry Zucchini Muffins Recipe

Everybody loves blueberry muffins. But did you know that blueberries can actually help prevent vision loss and other eye-related issues that occur as we age? That's because blueberries contain carotenoids and flavonoids, two powerful antioxidants that studies have shown can actually help improve the health of your eyes' retinas.

The same also holds true for zucchini, which contains beta-carotene, which research has also shown can help prevent age-related eye conditions such as a macular degeneration.

Try this new take on an old recipe, with blueberry and zucchini muffins that are delicious and great for your eyes!


Ingredients

1 1/2 cups all-purpose flour
1/2 cup white sugar
1/4 cup brown sugar
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt 
1/2 cup olive oil
1/4 cup milk
1 egg
1 1/2 tsps. vanilla extract
1 cup shredded zucchini
1/2 cup fresh blueberries
2 tbsps. icing sugar (optional)

Directions

1. Preheat oven to 350 degrees F (175 degrees C) and grease 12 muffin cups (or fill a muffin tray with paper liners).

2. In a bowl, mix together the flour, white sugar, brown sugar, baking soda, cinnamon, and salt.

3. In a separate bowl, whisk together the olive oil, milk, egg, and vanilla extract until smooth.

4. Combine the ingredients from both bowls together and mix until the batter is moist.

5. Using a rubber spatula, fold the zucchini and blueberries into the batter.

6. Fill each muffin cup about 2/3 full with batter.

7. Bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Remove from the oven and let cool. Sprinkle with icing sugar.
