Salmon and Mango Salsa Recipe

Eating salmon is a great way to maintain the health of your eyes. That's because fish contains the Omega-3 fatty acids DHA and EPA, which some studies have shown may help with eye inflammation and reduce the effects of vision conditions such as Age-related Macular Degeneration, cataracts and dry eye syndrome.

Try this delicious salmon and mango salsa recipe. It's a treat for both you and your eyes!


Ingredients

4 wild Alaskan salmon fillets (frozen or fresh)
1 tbsp. olive oil
Salt and pepper

Melon Salsa:
1 cup cantaloupe (cut into 1/4-inch cubes)
1/2 red pepper (cut in 1/4-inch cubes)
1 green onion (chopped finely)
1 tbsp. fresh cilantro (chopped)
Salt and pepper
Juice and zest of 1 lime
1 tbsp. olive oil

Instructions

1. Preheat your oven broiler to 400 degrees.

2. Line a cooking sheet with aluminum foil.

3. Place the salmon fillets on the cooking sheet and lightly brush them with olive oil. Sprinkle a little salt and pepper on each fillet.

4. Place the salmon in the oven for 5-10 minutes (or until brown on the top and cooked throughout).

5. While the salmon is cooking, prepare the salsa.

6. Gently mix together the cantaloupe, green onion, red pepper and cilantro to create your salsa. Season with a little salt and pepper.

7. In a small bowl, whisk together the olive oil, lime zest and lime juice to create a dressing.

8. Pour the dressing over the salsa and mix them together.

9. When the salmon is finished cooking, place one fillet on each plate and spoon one quarter of the salsa on top. 

Serve this mouth-watering dish with a green salad and brown rice.
