Add one more to the list of spinach superpowers – evidence shows it may also keep your eyes healthy!
Poor vision due to macular degeneration is very common in aging adults. Spinach is an abundant source of lutein, an antioxidant that makes up part of the retina. Some studies have shown that a spinach-rich diet can reduce or even reverse this age-related damage.
But there’s no need to eat spinach for this reason alone – just enjoy it because it’s delicious. Paired with sweet berries, creamy goat cheese, and the tang of balsamic dressing, the fresh, tender baby leaves in this salad are simply delectable. Perfect with some French bread and a glass of white wine.
6 cups baby spinach, washed
5-7 strawberries, sliced and hulled
6-8 white mushrooms, sliced thin
1/3 cup walnuts
¼ cup goat cheese, crumbled
½ cup olive oil
¼ cup balsamic vinegar
1 garlic clove, minced
½ tsp salt
½ tsp freshly ground black pepper
