Earlier this month we asked you for your best pumpkin seed recipes. Pumpkin seeds are full of omega-3s and are an excellent source of vitamin E, which supports healthy vision. We were so impressed by all of the creative ideas that were shared. Here are some of our favourite toasting recipes to help you make use of your seeds after pumpkin carving! 


Susie’s Toasted Ranch Pumpkin Seeds


1 cup of fresh pumpkin seeds

1 teaspoon olive oil

1/2 teaspoon sea salt

1/4 teaspoon onion powder

1/4 teaspoon parsley

1/4 teaspoon garlic powder

1/4 teaspoon dill

1/8 teaspoon dry mustard

1/8 teaspoon celery seed

1/8 teaspoon paprika

1/8 teaspoon black pepper


  1. Rinse and dry your pumpkin seeds.
  2. Set the oven to 300°F degrees and roast the seeds for 20-30 minutes until golden brown.
  3. Toss with all the spices and olive oil!


J.C.’s Recipe for Spicy Pumpkin Seeds


2 cups of pumpkin seeds

2 tablespoons of olive oil 

1 teaspoon of curry powder or chili powder

Salt and pepper to taste


  1. Wash and dry your pumpkin seeds.
  2. Sprinkle the seeds with the curry or chili powder, salt and pepper.
  3. Spread the seeds into one layer on a pan.
  4. Roast the seeds until crispy in a 300°F oven.


Sandra’s Simple & Savory Pumpkin Seeds


1 cup of pumpkin seeds

1 tablespoon of olive oil

2 teaspoons sea salt


  1. Wash and dry the pumpkin seeds.
  2. Brush the seeds with olive oil and bake them in a 300°F oven until slightly browned.
  3. Let the seeds cool, then sprinkle with sea salt.
