Carrots have beta carotene giving the vegetable it’s orange hue but also Vitamin A, important for healthy vision. The chicken in this recipe is also rich in Vitamins B6 and B12 which can lower the chances of macular degeneration (AMD). The coconut of course is a source of Omega-3 fatty acids that lubricates the eye and also reduces the risk of AMD. 1 tablespoon butter
1 cup chopped onion celery and carrots
4 cloves garlic chopped
Chicken breast cooked and cubed
1 teaspoon grated ginger
1 teaspoon curry
1 teaspoon chili
1 teaspoon cumin
4 cups chicken broth
1 can diced tomatoes
1 cup cooked basmati rice
1 can coconut milk
Salt and pepper to taste
Optional chopped cilantro
