Spinach is one healthy ingredient that packs a powerful punch (just ask Popeye!). In fact, it's a versatile green veggie loaded with lutein, zeaxanthin and Vitamin K; three nutrients that can promote healthy eyes and which may reduce the risk of Age-Related Macular Degeneration.

2 cups shredded mozzarella cheese
1/2 cup fat-free sour cream
1/4 cup grated Parmesan cheese
1/4 tsp. black pepper
3 garlic cloves (crushed)
1 (14 oz.) can artichoke hearts (drained and chopped)
1 (8 oz.) block low fat cream cheese
1 bunch of fresh spinach (chopped)
1 package of baked tortilla chips
1. Preheat oven to 350°.
2. In a large bowl, combine half the mozzarella, half the Parmesan cheese and all of the sour cream. Stir well with a large wooden spoon.
3. Next, add the pepper, garlic, artichoke hearts, cream cheese and spinach to the bowl and blend all the ingredients together.
4. Spoon the mixture into a large baking dish and cover the top with the remaining mozzarella and Parmesan cheese.
5. Bake at 350° for 30 minutes or until bubbly and golden brown.
Serve with tortilla chips for dipping!
