Spring Apple Farro Salad Recipe

With the weather warming up and calling us outside, you may be preparing a picnic or you simply want to enjoy a refreshing and cooling snack! Consider this high fibre and tasty Apple Farro Salad recipe. 

FYidoctors patient Melissa Condon submitted this recipe for its fibre-boosting powers. A diet healthy in fibre slows down the digestion and absorption of sugars and starches. Fibre also keeps you feeling full, which makes it easier to limit the amount of calories you consume. Experts suggest that at least half of your daily grains and cereals be 100% whole grains. As well, a balanced nutrition rich in fruit and vegetables may help with possible prevention of the development of some eye conditions. 

Cooked farro has a nutty flavour and slightly chewy texture, both of which are particularly delicious in healthy recipes like this one. Use your favourite variety of apple to make this easy side dish. Sliced pears are a perfect match, too. 


- 2 cups arugula 

- 1 cup of farro, cooked 

- 1 green apple sliced and diced 

- 2 small radishes, sliced and diced 

- 1/4 cup sunflower seeds (optional alternative: walnuts or pine nuts) 

- 1/4 cup chick peas, rinsed and drained 

- 1/4 cup apple cider vinegar 

- 1 tbsp olive oil   


  1. Wash and dry arugula  
  2. Cut and dice apples and radishes  
  3. Rinse and drain chick peas  
  4. Mix vinegar and olive oil to make dressing  
  5. Toss everything and enjoy!
