The summer is a fantastic time to get together with your friends and family and enjoy a delicious meal in the warm weather. Eating outside is a novelty that only lasts for so many months, so grab your sunscreen and shades and get out there.
When choosing what to eat, consider your vision. We’ve chosen this salad for the goodness in the ingredients. Strawberries are teeming with vitamin C which protect your eyes from age-related diseases and promote healthy blood vessels and connective tissue. Spinach is rich in lutein and zeaxanthin, two minerals critical in protecting the macula from damage. Plus, the almonds contain vitamin E, a known component in reducing your chance of cataracts. Dine on this and feel great about what you’re eating for your eyes!

Ingredients
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/2 cup olive oil
1/4 cup distilled white vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach – rinsed, dried, and torn into bite-sized pieces
4 cups strawberries
1/4 cup almonds, blanched and slivered
Optional: top with goat cheese
Directions
In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.
