Chocolate Coconut Drops

Believe it or not, chocolate (when eaten in moderation) is actually good for your eyes. That’s because it contains flavonoids, which studies have found to lower cholesterol and protect the blood vessels in your eyes.

Coconut meat is also packed full of health benefits. With 1 cup of shredded coconut containing 7.2 grams of fibre, regular consumption will further help moderate your cholesterol levels. Reducing your LDL cholesterol plays a significant role in your overall health, including your eyes.

What do you call a dessert that tastes just as good as it is good for you? Amazing, of course! Here’s the surprisingly simple recipe.

Ingredients (makes about 48 drops)

1 cup    coconut sugar
½ cup   coconut oil
½ cup   milk
3 cups rolled oats
1 cup    unsweetened shredded coconut
6 tbsp. cocoa
½ cup   chopped walnuts


  1. Combine the sugar, coconut oil, and milk in a large sauce pan. Cook on medium heat (stirring continuously and ensuring that the milk does not burn).
  2. Once the mixture begins to boil, remove it from the stove and immediately add the rolled oats, shredded coconut, cocoa, and chopped walnuts.
  3. Mix quickly; while the mixture is cooling, drop spoonfuls onto greased, non-stick cookie sheets.
  4. Place in the fridge and allow to cool for 10 minutes.
  5. Serve and enjoy!
